In Gallatin, longtime friends and real estate partners Ashley Cook and Josie Parsons faced one of their most challenging transactions yet: a commercial deal for a client’s dream daycare, Premier Academy.

Though their expertise lies in residential sales, the partners were determined to help after commercial efforts elsewhere stalled.

After years of searching and perseverance, they found a property needing significant work and pursued SBA loan financing despite months of hurdles, city approvals, and a surprising environmental requirement that nearly derailed the process.

With creative problem-solving and relentless effort, multiple extensions were secured until closing day finally arrived.

The building now belongs to their client, and Premier Academy is set to open this fall, offering much-needed childcare for local families.

This inspiring journey is a reminder: real estate isn’t just about property, it’s about community, partnership, and making lasting dreams a reality in Sumner County.

Baked Parmesan Crusted Tilapia

Light, flaky fish with a crispy topping that takes less than thirty minutes to make.

Overview

This recipe works well when you want something quick but still feels like you put effort into dinner. The fish stays tender, and the Parmesan crust adds texture without making it heavy. You can serve it with rice, steamed vegetables, or a simple salad. It also works if you're cooking for just yourself or a small group in Gallatin, Hendersonville, Portland, or any of the other Sumner County towns.

Ingredients

  • 4 tilapia fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 1 tablespoon melted butter
  • ½ cup grated Parmesan cheese
  • ÂĽ cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ÂĽ teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • Optional: chopped parsley and lemon wedges for serving

Instructions

  1. Preheat the oven
Set your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare the topping
In a small bowl, mix Parmesan, panko, garlic powder, paprika, salt, and pepper. Stir in melted butter until the mixture looks crumbly.

  3. Season the fish
Pat the tilapia fillets dry with a paper towel. Brush both sides with olive oil and drizzle with lemon juice. Place them on the baking sheet.

  4. Add the crust
Press the Parmesan mixture evenly onto the top of each fillet. Pack it down gently so it sticks.

  5. Bake
Bake for 12 to 15 minutes until the fish flakes easily with a fork, and the topping is golden brown.

  6. Serve
Plate the fish and garnish with parsley and lemon wedges if you have them.

Notes

You can swap tilapia for cod or another white fish if that's what you prefer. If you want more flavor, add a pinch of cayenne to the topping. The recipe doubles easily if you're feeding more people. Leftovers keep in the fridge for a day, but are best eaten fresh since the crust softens when reheated.
